Let’s start with a classic – broccoli and cheese soup. This hearty and creamy soup is the perfect comfort food for those chilly winter nights. 

To make this soup, you will need the following list of items:

  • Chop and thaw 2 cups of frozen broccoli
  • 1-onion chopped
  • 2 cloves of garlic, minced
  • 2 cups of vegetable broth
  • 1 cup of milk
  • 1 cup of shredded cheddar cheese
  • 2-tablespoons of butter
  • Salt and pepper to taste

Instructions:

  1. Put the butter in a big pot and Melt it over medium heat.
  2. Cook the chopped onion and garlic until the onion is transparent.
  3. Add the thawed and chopped broccoli and vegetable broth to the pot.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes or until the broccoli is tender.
  5. Using an immersion or a regular blender, Blend the soup until smooth.

  8. Place the stuffed potatoes back in the oven and bake for another 10-15 minutes or until the cheese melts and is bubbly.
